Cooking appliance
A connected commercial combi oven, like other cooking appliances in professional kitchens, reports its status, consumption and cooking processes to the cloud. Operators roll out recipes centrally, document HACCP compliance and know about faults before a technician arrives.

ConnectedCooking: IoT platform for RATIONAL AG

Smart IoT functions for device fleet

Smart kitchen: automated cooking programs from the cloud
Connected commercial combi ovens: recipes, service and HACCP
With ConnectedCooking, RATIONAL runs a global IoT platform for its combi steamers; inovex develops and operates the cloud components. It is based on a lightweight MQTT platform with microservices, web front ends and apps for iOS and Android, while the appliances run embedded Linux. MKN connects its combi steamers to Deutsche Telekom's Cloud of Things and uses it to load cookbooks and cooking programmes. Hobart transmits data from the factory-fitted sensors via a network gateway in the appliance and the operator's Wi-Fi to an application on Microsoft Azure. The data covers status, error messages, consumption of electricity, water and cleaning agents, and whether the required temperature was held constant.
The examples come from chain restaurants, canteens, hotels and hospital kitchens, for audit reporting and digital documentation. At RATIONAL, every cooking process automatically goes into HACCP-compliant documentation, and new software or recipes reach large fleets of appliances at the push of a button instead of by USB stick. According to the solution example, around 25 percent of service calls are handled remotely. With MKN appliances, rolls and croissants at the snack counter of a large retail chain always turn out the same. Hobart gives operators utilisation data and automatic error messages with direct contact to a service partner.
Commercial combi ovens: frequently asked questions
What does a connected combi oven do in a commercial kitchen?
A connected combi oven cooks many meals evenly and precisely and receives its cooking programmes centrally from the cloud. In 2004, RATIONAL introduced combi steamers that cook autonomously: you enter the desired result and the appliance cooks automatically. MKN loads cooking programmes onto its combi steamers via the Cloud of Things, so that rolls and croissants at the snack counter of a large retail chain always turn out the same.
How do cooking programmes reach the combi ovens of a restaurant chain?
An IoT platform loads cooking programmes and cookbooks centrally onto all connected combi steamers. MKN uses Deutsche Telekom's Cloud of Things for this, RATIONAL its own ConnectedCooking platform. Before ConnectedCooking, this was only possible by USB stick; today, a customer with many appliances transfers new software or recipes at the push of a button. The cloud also makes it possible to manage several kitchens at different locations.
How does a connected cooking appliance support HACCP compliance?
The appliance documents the relevant data itself instead of staff keeping lists. At RATIONAL, every cooking process automatically goes into standardised, HACCP-compliant documentation. Among other things, MKN stores when the combi steamer was last cleaned and whether it kept the required temperature constant. Hobart gives catering businesses automatic proof of compliance with hygiene regulations through a hygiene check and log.
How does IoT make commercial kitchen equipment repair easier?
Connected appliances report faults automatically and supply the cause along with them. According to the solution example, around 25 percent of RATIONAL's service calls are handled remotely, and in about 40 percent of call-outs the cause of the fault is known in advance. Hobart combines automatic error messages with direct contact to a service partner, and the app shows the operator the troubleshooting steps in pictures.

Pump
Pump monitoring with IoT records vibration, temperature, pressure and energy consumption of running pumps. Operators detect damage and faults before a pump fails and plan maintenance by condition rather than at fixed intervals.
Compressor
With IoT, compressor maintenance follows actual condition: sensors record current consumption, pressure, temperature and running times. Operators detect creeping damage and unused running time early and cut energy and service costs.
Electric motor
Motor condition monitoring with IoT continuously measures the vibration, temperature and current draw of electric motors. Operators detect imbalance, bearing damage or winding faults early and replace motors based on condition rather than after a failure.
Packaging machine
OEE software automatically records run times, downtime, speed and rejects on packaging machines from the machine signals. Operators see where their lines lose performance, and machine builders use the same data for remote access and digital services.
Refrigeration system
A refrigeration monitoring system makes service plannable: temperatures, refrigerant circuit pressures, compressor status and energy consumption flow into a platform in real time. Operators and service partners detect faults early, avoid unnecessary site visits and reduce excess consumption.
Air conditioning system
Commercial air conditioning systems in offices, retail branches and data centres can be monitored remotely with IoT. Operators see energy consumption, temperatures and faults in one place, detect failing compressors or refrigerant shortages early and plan service visits precisely.
